摘要
任何溶液都可用电导率来描述其导电性,葡萄酒也是如此。通过测量葡萄酒在-4℃、1小时内的电导率系列值及测定加入KHT后,同样条件下的葡萄酒的电导率系列值,并做出图线,就可以找出葡萄酒的电导率与稳定性的关系。讨论是否能用该关系判断葡萄酒的稳定性并利用该关系预测冷稳工艺的难易。测量葡萄酒进行冷稳工艺后的临界饱和温度,利用经验值来判断该酒是否达到稳定要求。
:The relationship between CONDUCTIVITY & SATURATION TEMPERATURE of wine and its stability was researched by application of conduct metric machine (PADOVAN, Ity) to two kind of wine. It was confirmed that each kind of wine has its own CONDUCTIVITY & SATURATION TEMPERATURE. And the CONDUCTIVITY & SATURATION TEMPERATURE can indicate if the wine is stable.
