摘要
论述了糖化酶的产生、酶的性质和分子结构，以及糖化酶对淀粉的作用机制，并且介绍了利用基因工程技术构建糖化酶工程菌的研究进展。
Strains of glucoamylase-producing this article reviews. characteristcs and molecular structure, and acting mechon- ism of GLUM were reviewed. This report gene expressing of GLUM in S. cerevisiae and application to ethonol production.
