有机酸是影响浓香白酒风味方面极为重要的一种物质。阐述了有机酸在浓香白酒生产中的作用及应用 ,应用有机酸明显提高产品质量。
Organic acids are important matters affecting the flavor of Luzhou-flavour liquor.The functions and application of organic acids in the production of Luzhou-flavour liquors were described,the product quality improved obviously by useing organic acids.
