摘要
从己酸菌人工窖泥培养工艺和生产工艺两个方面 ,探讨其对产品质量的影响。在生产工艺方面 ,吸收、借鉴了四川泸州工艺的优点 ,重点探讨了原辅料处理、配料、摘酒、入池、封窖和窖池管理这6道工序。
From the points of the culture techniques and production techniques of caproic acid bacteria artificial pit mud, we investigated its influence on the quality of the products in this paper. We absorbed the advantages of Sichuan Luzhou liquor's techniques and used for reference in the production, and we focused on the management of the raw and auxiliary materials, materials mix, liqour storage, pit entry, pit seal and pit management etc. (Tran.by YUE Yang)
