摘要
[目的]为了研究不同氮水平下马铃薯块茎品质的动态变化规律.[方法]采用田间试验的方法,探讨不同氮水平影响下马铃薯块茎中蛋白质、淀粉和维生素C含量的动态变化规律.[结果]播种后63~91 d,不同处理的块茎粗蛋白质含量随施氮水平的增加而增加,之后施氮120 kg/hm2处理下降较快;马铃薯收获时,各处理马铃薯块茎总淀粉含量分别为619.2 ~ 669.1 g/kg.[结论]过量的氮肥不利于可溶性糖向淀粉的转化;过高的氮肥水平并不利于马铃薯生长后期块茎中淀粉的积累.
[ Objective ] The aim was to study the effect of different nitrogen levels on quality of potato. [ Method ] The effect of different nitrogen application rates on dynamic change law of tuber protein, starch and Vc synthesis of potato was studied in field experiments. [ Result ] The results showed that protein content of tuber also increased gradually from 63 to 91 days after sowing with the increase of nitrogen amount, and nitrogen 120 kg/hm2 treatment decreased rapidly after that. The potato tuber starch content respectively was 619.2 -669.1 g/kg at harvest. [ Conclusion] Excessive nitrogenous fertilizer was not conducive to the transformation of soluble sugar to starch. Excessive nitrogenous fertilizer was not condu- cive to the tuber starch accumulation.
