摘要 [目的]了解茶叶中蛋白质的含量。[方法]研究了Folin-酚检测方法测定蛋白质的基本原理、试剂的制备及配制,以绿茶的嫩叶粉、老叶粉和茶叶提取物为检测样品,选用Folin-酚的检测方法对茶叶中的蛋白质含量进行了检测。[结果]Folin-酚法测定茶叶中蛋白质含量的线性方程为y=0.637 6x+0.043 5,线性相关系数为0.999 4,绿茶中蛋白质的含量分别为嫩叶粉9 234.8 mg/kg、老叶粉4 125.6 mg/kg、茶叶提取物26 508.8 mg/kg。[结论]研究表明,Folin-酚法测定茶叶中蛋白质含量的原理科学、方法成熟,茶叶中蛋白质含量丰富,可以进行有效的应用。 [ Objective ] To understand the content of protein in tea. [ Method ] The basic principle of Folin-phenol detection method, the reagent preparation and compounding solvent were studied. With tea extracts, tea shoot powder and older tea powder as samples, the protein content in tea was determined by Folin-phenol method. [ Result ] The linear equation is y = 0. 637 6 + 0. 043 5x, and the linear correlation coefficient is O. 999 4, the content of protein in green tea respectively, older leaves is 4 t25.6 mg/kg, tender shoot tea is 9 234. 8 mg/kg, tea extracts is 26 508.8 mg/kg. [ Conclusion] The content of protein is rich in tea and Folin-ohenol method can be aoolied effectively.
