摘要
为了有效地开发牡丹花,通过总结相关资料,分析了牡丹花茶开发的可能性与必要性,阐述了牡丹花的品种资源以及牡丹花茶的真空冷冻干制、热风干制、自然晒干、接触干燥等干制工艺,并对适宜加工花茶牡丹品种进行了筛选,最后探讨了牡丹花茶干制过程中出现的易碎、变色、茶色感官接受度低、干制后花香难以保留等问题。
The possibility and necessity of the research and development of peony tea were analyzed by consulting relevant materials to exploit peony tea effectlvely,and the variety resources of the peony and drying technology such as vacuum freeze drying,hot air drying,natural drying,drying and other drying process were reviewed,and peony cultivars that is suitable for processing tea were screened.Finally,the author discussed problems in the drying process of peony tea,for example,fragile after being dried,color changing,sensory acceptance for the color of peony tea,keeping and improving the perfume of dried peony.
