The Spread and Localization of American-originated Vegetable Crops in China

摘要 哥伦布发现新大陆后,美洲作物开始向世界各地广泛传播。明清以来,美洲原产蔬菜作物传入中国,并在全境广泛传播,到清末民初基本完成了本土化发展。这些外来蔬菜作物在中国的传播发展受到近代中外交流、中国传统文化、中西饮食文化融合等社会文化因素的深刻影响。美洲蔬菜的传入对增加我国蔬菜种类,丰富中国餐饮文化,促进中西方文化的交流与融合具有重要的意义。 After Christopher Columbus discovered the New World,American-originated disseminated around the world. American-originated vegetable crops were brought to China, and crops widely widely spread in the territory since Ming dynasties. To the end of Qing dynasty, these kinds of vegetables had basically completed the localization development. The dissemination and development of these exotic vegetable crops in China were deeply influenced by social and cultural factors of communication between Chinese and western countries, Chinese traditional culture, the fusion of Chinese and Western cooking culture. The introduction of America-originated vegetables increases kinds of vegetables in China, rich Chinese dining culture, and it has a significant effect of exchange and fusion of Western culture.
