摘要
针对目前啤酒生产中普遍采用两段法麦汁冷却工艺 ,对万吨啤酒厂一段冷却法进行了论证 .热麦汁用现有的 2台 2 0 m2 薄板换热器冷却至 8℃ ,酿造用水经冷冻到 3.5℃后用于麦汁冷却 ,出口温度达78℃ ,作为糖化和洗槽用水 .啤酒生产成本比两段法降低 1 2 .5元
Two\|stage wort cooling technology was generally applied in brewing. One\|stage cooling regime was demonstrated in this new design. Hot wort was cooled to 8 ℃ with chilled brewing water at 3.5 ℃ in two existing 20 m 2 plate heat exchangers. The outlet water at 78 ℃ was used as mashing and sparging water. The beer production cost was 12.5 yuan·t -1 lower than that of two\|stage cooling technology.
