摘要 随着微胶囊技术的发展,纳米微胶囊技术受到越来越多的关注,本文对纳米微胶囊技术的定义、制备方法以及在食品中的功能作用进行介绍,并综述近年来纳米微胶囊技术在功能食品中的应用研究进展,同时探讨纳米微胶囊技术在功能食品领域中的研究现状及以后的研究趋势。 With the development of microcapsule technology, nanocapsule technology has received more attention. The definition, preparation methods and function in food of nanocapsule are introduced in this paper, and the new research progress of nanocapsule technology applications in functional food in recent years are reviewed. In addition, current studies and future applications of nanocapsule technology in the functional food field are explored.
