豆渣DNA酶解物制备及其体外抗氧化活性

Preparation and Antioxidant Activity of Soybean Dregs DNA Hydrolysates in Vitro

摘要 以豆渣DNA为原料,以OD260为检测指标,通过单因素和正交试验优化DNase I对其最佳酶解工艺,并比较豆渣DNA酶解前后的抗氧化活性。结果表明,豆渣DNA酶解的最佳条件为:酶解温度37℃,pH 7.5,加酶量(E/S)3 000 U/g,底物浓度2.5%,此时OD260为1.57。豆渣DNA酶解物的·OH清除率、DPPH·清除率及其还原力均明显高于豆渣DNA。 The optimal condition for enzymatic hydrolysis of soybean dregs DNA was investigated based on the index of 019260, and the antioxidant activity in vitro was analyzed between soybean dregs DNA and its hydroysates. The results indicated that the optimal enzymolysis condition was that the temperature of 37℃, the pH of 7.5, the enzymatic concentration of 3 000 U/g, the substrate concentration of 2.5% and the time of 3 h. Under this condition, the 0D260 of DNA was 1.57. The·OH scavenging rate, DPPH. scavenging rate and reducing capacity of soybean DNA hydrolysates were significantly higher than that of soybean DNA.
