摘要 以大豆分离蛋白(SPI)为主要原料,添加增塑剂(甘油),还原剂(Na2SO3)制备大豆分离蛋白膜,研究在改变蛋白浓度,甘油、Na2SO3含量对大豆分离蛋白膜各项性能的影响。研究结果表明:甘油含量对膜性能有较大的影响,并且确定了大豆分离蛋白膜的最佳成膜配方。即:大豆分离蛋白含量4.0%,增塑剂浓度2.0%,还原剂浓度0.1%。此条件制得的蛋白膜成膜性能较好,抗拉强度可达7 418.62g,厚度为0.97mm,透光度0.131,水蒸气透过率20.06g/(h·m2),透氧率0.93g/(h·m2),二氧化碳透过率3.88g/(h·m2)。 Abstract: Taking soy protein isolate (SPI) as the main raw material and adding plasticizer (glycerol) and deoxidizer (Na2SO3) preparations of soy protein isolate film. Study on changes of content in protein concentrations, glycerin and Na2SO3 on various effects of properties of soy protein isolate film has been conducte. The results show that: glycerol content on the membrane performance has great influence and protein concentration, glycerin and NazSO3 content have great influence on the performance of the film. The best ingredient for soy protein isolate film is that: the SPI content is 4. 0~, plasticizer concentration is 2. 0% and deoxidizer concentration is 0. 1~. In this condition, the soy protein isolate film have better performance. Tensile strength can reach 7 418. 62 g, thickness is 0. 97 mm, transmittance is 0. 131, water vapor transmission rate is 20. 06 g/(h ~ m2 ), Oxygen transmission rate is 0. 93 g/(h ~ mz), and carbon dioxide rate is 3.88 g/(h ~ m2).
