摘要
简要介绍了真空冷冻干燥技术基本原理及冻干食品的特点.鉴于真空冷冻干燥存在的问题,着重介绍了真空冷冻干燥的新工艺、新技术以及真空冷冻干燥技术在我国的发展前景.
The paper briefly introduces the principle and advantage of vacuum freezing drying technique. Due tothe problems at present, new technology of vacuum freezing drying is introduced. As a kind of new technique, ithas a brigh future.
