摘要
目的研究树莓提取物的抗氧化活性与总花色苷、总多酚和总黄酮含量间的相关性。方法采集不同品种及不同成熟期的树莓,采用DPPH和ABTS法测定各树莓乙醇提取物的清除自由基能力,再分别采用pH示差法、Folin-Ciocalteu法和亚硝酸钠-硝酸铝-氢氧化钠显色法测定不同树莓中总花色苷、总多酚和总黄酮的含量,利用Pearson相关系数分析树莓的抗氧化活性与各成分含量间的相关性。结果树莓的抗氧化活性与总黄酮和总多酚含量显著相关,尤其与总多酚含量的相关性最高(r>0.91),但与总花色苷含量的相关性不明显。结论多酚类物质是树莓发挥抗氧化作用的主要物质基础。
Objective To study the correlation between antioxidant activity and contents of total anthocya- nins, total phenols and total flavonoids of raspberry extract. Methods DPPH and ABTS radical scavenging assays were carried out to evaluate the antioxidant activities of raspberry extracts from five varieties harves- ted at three maturity stages. The contents of total anthocyanins, total phenols and total flavonoids were deter- mined by pH-differential method, Folin-Ciocalteuu colorimetric assay and NaNO2-A1 (NO3 )3-NaOH meth- od,respectively, and their correlations with anoxidant activities were analyzed by Pearson correlation coeffi- cient. Results It was found that antioxidant activity was correlated with the contents of total flavonoids and total phenols, especially with the content of total phenols ( r 〉 0.91 ). Conclusions Phenolic compounds are mostly responsible for the antioxidant activity of raspberry.
