摘要
[目的]研究和开发六堡茶渥堆发酵自动控制技术及其设备。[方法]针对六堡茶传统渥堆发酵的局限性,确定研发技术路线及其关键点,设计合适的机械操作设备及检测控制模板块,实现渥堆发酵自动控制联机操作。[结果]在茶叶加湿准确度、发酵茶叶含水量和温度、发酵环境湿度等方面均达到预期目的,并优于传统工艺控制效果,还改善了加工过程的卫生,提高了单位面积生产能力,减轻了劳动强度,取得4项专利成果。[结论]六堡茶渥堆发酵自动控制技术及其设备可行、可靠、可推广。
[ Objective ] To research and develop Liubao Tea pilling fermentation automatic control technology and equipment. [ Method ] Ai- ming at limitation of traditional pilling fermentation of Liubao Tea, the research technical route and key points were determined, the proper me- chanical equipment and detection control template block was designed. [ Result] The results not only achieved the expected objectives in tea humidifying accuracy, fermented tea water content and temperature, fermentation environment humidity and was better than:traditional tech- niques control, but also improved the hygiene during processing, increased the unit area productivity, reduced the labor intensity, .obtained 4patents. [ Conclusion] Liubao Tea pilling fermentation automatic control technology and equipment is workable, reliable and can be spread.
