介绍了扳倒井有机窖泥的制作方法,包括窖泥功能菌的扩大培养条件及其培养基,窖泥的具体配料及其制作过程,扳倒井有机窖泥生产技术的特点;陈述了扳倒井判断成熟有机窖泥的检验标准,以及在改造老化窖池时的使用方法;说明了在酿酒生产过程中,为延缓池壁窖泥的老化而采取的措施,并讨论了池壁窖泥老化的主要原因,是因为现代建造的窖池多数是砖窖,导致能够养护窖泥的黄浆水大量渗漏。
This paper introduced a method for making Bandaojing organic mud pit, including functional bacteria in pit mud culture conditions and medium expansion, concrete hatching and making process of pit mud, characteristics of Bandaojing organic mud pit production technology; stated Bandaojing judgment test mature organic mud pit standard, as well as in the transformation of aging cellar when using method; in the wine production process, to delay the aging pool wall pit mud measures, and discussed the main reasons of the pool wall pit mud aging, was the most modem construction of the pit was a brick kiln, leading to maintenance of pit mud of yellow serofiuid bulk leakage.
