由于原酒压排生产的影响母糟会出现酸度大、显腻及活性差等状况,导致转排出酒短、淡、单及各项理化指标偏低等结果,但是仍然会有优质酒的出产,这跟其当时的蒸煮工艺及入池操作是离不开的。为了提高转排出酒质量及出酒率特建立转排酒工艺参数数据库,以总结生产经验,积累生产数据,分析优良生产条件,指导日后转排生产。
