北方地区多粮原酒生产的转排工艺探究

摘要 由于原酒压排生产的影响母糟会出现酸度大、显腻及活性差等状况,导致转排出酒短、淡、单及各项理化指标偏低等结果,但是仍然会有优质酒的出产,这跟其当时的蒸煮工艺及入池操作是离不开的。为了提高转排出酒质量及出酒率特建立转排酒工艺参数数据库,以总结生产经验,积累生产数据,分析优良生产条件,指导日后转排生产。 due to the influence of base liquor pressure line production mother bad appears acidity, greasy, poor activity situation, lead to a short, thin, single turn out wine and the physical and chemical indexes is low etc. As a result, but still there will be a high quality liquor yield, this with its cooking process and into the pool at that time is inseparable from the operation.
