鲜枣果实衰老与膜脂过氧化作用关系的研究 被引量:41

摘要 以 5个品种鲜枣为材料 ,研究了贮藏期间果实衰老与膜脂过氧化作用的关系。结果表明 :枣果衰老软化时 ,膜透性增大 ,丙二醛含量上升 ;维生素C含量下降 ;POD和CAT活性呈双峰曲线。 The fresh fruits of 5 jujube( Zizyphus jujuba Mill.)varieties were used to investigate the relationship between senescence and membrane lipid peroxidation.The results showed that the membrane permeability and malonialdehyde content tended to increase as jujube fruit became senescent and softening.Ascorbic acid content decreased,while the activities of POD and CAT showed two peak curves.There was a significant difference between different varieties. It is proposed that the senescence of jujube was related to the increasing of membrane lipid peroxidation induced by active oxygen free radicals.
