代谢组学及其在葡萄酒研究中的应用 被引量:1

摘要 本文对代谢组学的概念、研究内容、研究方法与技术平台进行了介绍,对代谢组学技术在葡萄原料控制、葡萄酒酿造、葡萄酒质量与鉴伪以及葡萄酒与人体健康方面的研究进行了阐述,并对其在葡萄酒产业中的应用发展前景进行了分析与简述。
