摘要
孔雀石绿属于三苯甲烷类杀菌剂,在水产品疾病防治中具有高效和价格低廉的优势,因而在水产养殖业中广泛应用。然而,孔雀石绿及其代谢产物的高残留和高毒性不仅造成了水产品的畸变、癌变,也给食用者的健康带来潜在风险。本文综述了水产品中孔雀石绿的来源、毒性效应及机理、代谢途径及检测方法等方面的最新研究进展,并提出防控和降低孔雀石绿残留危害的针对性措施。水产养殖过程中的禁用、检测方法的发展会极大地降低孔雀石绿残留在食品安全方面的风险。本文旨在对水产品中孔雀石绿残留的监控提供最新资料,也为预防和降低其危害提出科学的可行性建议。
Malachite green is a triphenylmethane bactericide and antiseptic used extensively in aquaculture due to its low cost and high efficiency on disease prevention. Because of the carcinogenicity, mutagenicity and teratogenicity of its parent compound and metabolites, malachite green and leucomalachite green bring potential harms to human health. This paper reviews recent progresses on the sources, toxicity effects, mechanisms, metabolic pathway, and detection methods of malachite green in aquatic products. Finally, some preventive measures to reduce the hazards of residual malachite green have been suggested. The complete ban of malachite green in aquaculture and rapid development of detection methods will greatly reduce the risks of malachite green in food security. This review is aimed at providing some updated information on the monitoring of residual malachite green in aquatic products and offering scientific and available suggestions to prevent and eliminate the hazards of malachite green in aquaculture.
