Analysis of food contamination monitoring results in Xinxiang in 2012

摘要 目的通过对新乡市2012年食品安全风险的监测,了解部分食品中添加剂的使用情况和重金属污染情况,为风险评估和最终制定风险管理方案提供依据。方法从新乡市市区及周边县区主要农贸市场、超市采集食品,进行亚硝酸盐、铝、二氧化硫残留量、过氧化苯甲酰、铅、镉、汞理化项目的检测。结果本区食品添加剂污染主要来自亚硝酸盐、铝和二氧化硫残留量的污染,超标率分别为20.0%、87.1%和70.0%。重金属污染来自于铅和汞的污染,在粮食中铅的超标率达25.0%,在蔬菜中汞达12.0%。所有的503份样品中,总超标率为29.0%。结论新乡市食品中亚硝酸盐、铝、二氧化硫残留量污染比较严重,相关部门应采取措施,提高食品安全性。 Objective To understand the pollution situation of heavy metals and food additives in some food in Xinxiang and monitor the food safety risk, so as to provide basis for making risk management program. Methods Food samples were collected from farmers markets, supermarkets in Xinxiang city and the surrounding counties. Then the food additives such as nitrite, sulfur dioxide residue, aluminum, benzoyl peroxide, and heavy metals such as lead, cadmium, mercury were detected in these samples. Results In this area, food additives pollution was mainly from nitrite, aluminum and sulfur dioxide residue, and the overlimit rares were 20.0%, 87.1% and 70.0%, respectively. Heavy metal pollution was mainly from lead and mercury, the overlimit rate of lead was 25.0% in grains, 12.0% for mercury in vegetables. The total overlimit rate was 29.0% in all 503 samples. Conclusion The contamination of nitrite, aluminum and sulfur dioxide residue was serious in Xinxiang, so relevant departments should take measures to improve food safety in this area.
