摘要
本文分析了中国淡水蛏的营养成份 ,其水分、灰分、蛋白质和脂肪的含量分别为 87.8%、 1.2 %、 9.3%和 1.0 %。并含有 17种氨基酸 (色氨酸未测 ) ,必需氨基酸占氨基酸总含量的 35 .7%。此外 。
The major nutrition compositions in Novaculina chinensis have been analysed.It consisted of 87 8% moisture,1 2% ash,9 3% crude protein and 1 0% fat.There were 17 kinds of amino acids.12 kinds of mineral element were measured.
