"天时、地利、人和"对于酿酒来说十分重要,其中"天时"即是强调季节、时效与气候等因素对于酿酒过程,如制曲、酒醅堆积发酵、基酒贮存等的影响;"地利"则是强调地势相关因素,如原料、水质等对于酿酒的影响;"人和"则重点说明人作为酿酒过程的具体操作者,在工艺的采用、设备的选择、酒体设计勾调等方面中所扮演的重要角色。只有协调处理好"天时、地利、人和"三者间的关系,才能酿造出优质白酒。(晓文)
It is well known that a perfect match of people, time and location is of vital importance in producing high-quality liquor. Time refers to appropriate season and climate for starter-making, stacking fermentation of fermented grains, and base liquor storage. Location refers to good geo- graphic conditions providing good raw materials and water for liquor-making. People refers to liquor-making workers who play important roles in selecting proper techniques and equipments and making liquor body design and liquor-blending in practice. (Tran. by YUE Yang)
