摘要
以典型亚热带水果龙眼为研究对象,运用专家评分法和层次分析法对龙眼供应链过程中的生产、供应、物流、零售、消费环节的安全风险进行研究。在调查的基础上,通过模拟冷链物流条件,检测和分析龙眼在各种运输贮藏条件下品质指标的变化程度;基于龙眼的理化性质和试验数据变化规律,建立龙眼供应链品质安全指标体系;结合双指标体系对龙眼供应链的品质安全风险进行定性和定量的评价,结果表明,在适当的冷链物流条件下(温度5℃,有包装),龙眼供应链过程的品质安全风险最低。并针对各环节的风险提出了有效的规避和控制措施。
Taking the longan, a typical subtropical fruit, as research subject, this paper studied the risk of produce, supply, logistics, retail and consumption of longan supply chain. Based on the investigation,by simulating different logistics conditions of the whole supply chain, measuring indicators as well as analyzing the changeable indicator of longan under different conditions, the quality and safety indicator system were established. Using two-indicator system, the paper conducted qualitative and quantitative safety risk assessment and management, proposed effective risk evading and control measures.
