豆粕水解多肽与锌螯合物的制备方法研究 被引量:6

摘要 以豆粕深度水解多肽和水合乙酸锌为原料,合成多肽锌螯合物,通过正交试验优化合成工艺条件,采用红外光谱、元素分析、螯合滴定等分析方法表征其结构与组成。结果表明,在多肽与锌质量比为2∶1,反应温度60℃,pH为7,反应时间120 min的优化工艺条件下,锌的螯合率为66.16%,多肽锌螯合物的产率可达42.41%。 Using soybean polypeptide with full hydrolysis and Zinc acetate dihydrate as raw materials,Zinc polypeptide chelates were synthesized and characterized by IR spectrum,elemental analysis and chelatometric titration.The synthetic conditions of Zinc and soybean polypeptide were optimized by orthogonal test.The results show that the optimal condition was obtained as follows: the mass ratio of soybean polypeptide to Zinc was 2 ∶ 1,temperature was 60 ℃,pH was 7,time of reaction was 120 min.Under this condition,the chelating rate of Zinc was 66.16 % and the yield of the product can amount to 42.41 %.
