摘要
研究了蓝莓提取物的种类、提取纯化方法以及蓝莓在食品、保健等方面的应用.结果表明,蓝莓富含花青素、黄酮、多酚和多糖等抗氧化物质,在食品和营养保健等领域有着广泛的应用潜力,是一种营养价值和经济价值极高,发展潜力巨大的果树.
Studied on the kinds of extract and the methods of extracting of blueberry, and the application of food and health function. The result show that the blueberry contain the autioxidant activity of anthocyanins, flavonoid, polyphenols and polysaccharide. Its application is wide in food and nutrition and health care. The blueberry is a kind of fruit with high economic, nutrition values and huge development potentials.
