摘要
介绍了我国几类主要食品乳化剂———甘油脂肪酸酯、蔗糖脂肪酸酯、斯盘和吐温、大豆磷脂、硬脂酰乳酸钠和钙的生产和研究现状 ,并对我国食品乳化剂发展提出了几点建议。
The production and research situation of several major food emulsifiers in China are introduced,including glycerin ester of fatty acid,sucrose ester of fatty acid,span and tween,lecithin and sodium(calcium)stearyl lactate.Several viewpoints about the development of food emulsifiers in China are also put forward.
