摘要
以浙江新昌6个薄壳山核桃品种为研究对象,对果实和种子形态以及种仁的粗脂肪、蛋白质、糖、氨基酸和矿物质等主要营养成分含量进行测定分析。结果表明,薄壳山核桃含有丰富的脂肪、糖、蛋白质、氨基酸和矿物质等营养成分;品种间形态与营养成分含量存在显著差异,其中籽重8.90~14.55g,仁重2.40—7.79g,出仁率26.21%~58.73%,营养成分含量分别为:粗脂肪62.53%-70.95%,总蛋白6.03%~9.43%,总糖10.88%~15.30%,总氨基酸35.611~72.430m∥g,人体必需氨基酸总量10.138~20.288mg/g,矿物质含量0.56%~1.03%。
Six kinds of pecan [ Carya illinoinensis ( Wangenh ) K. Koch ~ in Xinchang, Zhejiang Province have been collected for measuring the morphology and determining the contents of the main nutrient components as crude fat, protein, sugar, amino acid, minerals, etc. The results showed that there are rich nutrient components in Carya illi- noinensis, while significant differences have been found in morphologies and the contents of the main nutrient compo- nents of different pecan varieties. The seeds have a range of weight from 8.90 g to 14.55 g, range of kernel weight from 2.40 g to 7.79 g, with 26.21%- 58.73 % of kernel rate ; the contents of crude fat, total protein, total sugar, total amino acids, total essential amino acids and total minerals were respectively as :62.53%-70.95 % ,6.03%-9.43%, 10.88%- 15.30% ,35. 611 - 72. 430 mg/g, 10. 138 - 20. 288 mg/g and 0.56%- 1.03%.
