摘要
目的了解武汉市市场上所销售酱腌菜中添加剂的现状和存在的问题。方法按每季度1次,全年4次对全市十五个城区超市、集贸市场上销售的酱腌菜进行随机抽样,用相应的国家标准方法检测样品。结果酱腌菜的总合格率为14.6%,主要是由于苯甲酸超标。结论武汉市市售酱腌菜中的苯甲酸等项目违规超范围、超量添加情况较为严重,提出规范食品添加剂的使用,加强食品添加剂的监督和管理。
Objective To investigate the additive pollution status of pickles in Wuhan city. Methods Pickle samples were collected randomly from supermarkets and pedlars' markets allover the city. Sampling was performed four times, once per quarter. Fourteen additives were determined in these samples according to corresponding national standard methods. Results The qualification rate was only 14.6% according to the current national standard, and it was mainly overuse of benzoic acid in pickles. Conclusion The results show serious overuse of food additives such as benzoic acid in pickles in Wuhan city. It is necessary to strengthen the supervision and management for use of food additives.
