摘要
[目的]研究旨在比较谷物全价饲料(谷饲)与50%牛奶+50%谷物饲料(半乳饲)对犊牛肉品质影响。[方法]选择日龄、屠宰体重和屠宰率相近的谷饲和半乳饲直线育肥的荷斯坦奶公犊各6头,分别对肉品质的营养成分、理化指标进行分析。[结果]表明,A组较B组犊牛肉的水分高0.35个百分点,蛋白质高0.25个百分点,脂肪、微量元素及胆固醇、脂肪酸、氨基酸含量差异不显著,而且均未检测出乳香味的呈味脂肪酸;两组犊牛肉的熟肉率、滴水损失、剪切力差异均不显著(P>0.05);A组较B组肉色红亮,差异显著(P<0.05)。[结论]利用谷物饲料育肥奶公犊可以生产出与半乳饲育肥品质相一致的犊牛肉。
[Objective]The aim of this study was to compare the influen feed (grain-fed) and 50% milk+50% grain feed (half milk-fed) on veal meat ce of grain complete formula quality. [Method]We selected separately six grain-fed and six half milk-fed straight fattening Holstein bull calves which were in the simi- lar age,slaughter weight and dressing percentage, and analyzed the nutritional composition and physico- chemical index of their meat. [Results]The results showed that, when compared to group B, moisture of the veal in group A was 0.35 % higher as well as the protein content was 0.25 % higher. While contents of fat, trace elements, cholesterol, fatty acid, amino acid showed no difference, and no fatty acid of milk fla- vor was detected. There was no significant difference in cooking percentage, shear force, and drip loss (P 〉0.05) of the veal between those two groups. However,veal color in group A was more bright red than group B (P〈0.05). [Conclusion]The grain-fed veal is of the same meat quality with the half-milk fed veal under 6-month of age.
