摘要
随着政策法规的加强,环境管理的深入,餐饮业有必要实施绿色供应链的管理模式。但目前餐饮企业参与绿色实践的比例很低。通过Grey-DEMATEL方法,分析了餐饮企业绿色供应链管理的实践影响因素。研究发现:主动开展绿色实践的重要影响因素依次是企业高层领导者的倡导、企业采购成本和管理费用增加,提高餐饮企业品牌竞争力,树立企业社会责任形象。而关联度高,长期影响因素是法律法规的强度和有效的激励政策,短期即可产生效果的因素是信息因素的影响。
Companying with the more tightly control in regulation and further requirement of environment management, catering enterprises have to engage in green supply chain management(GSCM). The number of the catering enterprises that engage in the green management practice in these days, whereas, seems so few. Through Grey - DEMATEL research method, the factors taking effect on the green practice of the representative res- taurant were analyzed in the paper. The results show that: the important factor influencing enterprise to initiative to carry out green practice is the advocacy followed by the senior leaders of enterprises. Purchasing cost and management cost increase, improving brand compe, titiveness of catering enterprise and constructing enterprise image of social responsibility are the other relatively important factors. And the high degree of association, long - term impact factor is strengthening laws and regulations and effective incentive policies. Short - term factors is the effect of information factor.
