摘要
目的了解北京市朝阳区餐饮服务单位管理人员对食品安全的态度、认识及需求现状,为下一步开展有针对性的工作提出可行性建议。方法采用自行设计的调查表随机抽取303名管理人员进行问卷调查。结果北京市朝阳区内绝大多数餐饮服务单位管理人员认为食品安全很重要,要高度重视,略超过半数的人员首先关注食品安全。超过半数的管理人员认为食品安全管理中最缺乏业务指导和有关人才。管理人员认为其所管理的餐饮单位存在的食品安全问题中位居前三位的与其遇到的食品相关投诉中位居前三位的比较一致。管理人员对行业协会有一定的认识,愿意接受行业协会的指导。结论餐饮服务提供者、监管部门、行业协会应当共同努力、形成合力,才能有效的提高餐饮服务单位管理人员的整体食品安全素质。
Objective To investigate the attitude and demand of management staff in catering industry and discuss the feasible suggestions. Method Surveys were completed using self-designed questionnaire for 303 managements. Result The vast majority of management staff considered that food safety was very important. Slightly more than half management staff concerned food safety firstly. More than half management staff considered lacking of advising and high-quality personnel. The top three problems of the catering industry were almost consistent with the top three complaints of consumers on food safety. Management staff were willing to accept the guides of Food Industry Association. Conclusion The catering service provider, the supervision department and the Food Industry Association should make concerted efforts on improving the overall quality of management staff.
