摘要 热泵用于食品干燥已越来越受到关注,而在小白杏干燥上的应用却少见研究.通过对新疆轮台小白杏进行整粒(分别用促干剂、NaHSO3和清水处理)和切分4种处理方式的干燥试验,研究了小白杏在热泵条件下的干燥特性和褐变规律.试验表明小白杏的干燥周期缩短1 ~2d,杏干的感官品质和卫生质量得到大幅提升. More and more researchers pay attention to heat pump for the application in the field of food drying, but the study on the application of heat pump drying of apricots is very few. Through the four drying experiments of Xinjiang Luntai apricots treated with the whole (using promoting dry agent, NaHSO3 and water treatment) and sliced, the drying characteristics and browning regulation under the condition of heat pump are analysed. The results show that the drying period of apricots is shorten, and the quality of dried apricots is increased greatly.
