摘要
目的做好第十二届中国科协年会开幕式当天午餐卫生监督,确保午餐安全。方法应用HACCP工作原理,对午餐从原料、加工流程、配送等进行全程危害分析,确定关键控制点,并采取纠偏措施。结果有效地保障了科协年会午餐的安全。结论在重大活动食品卫生监督中推广运用风险分析,是一种必然的趋势,是重大活动供餐食品安全的保障。
Objective To ensure lunch food safety on the day of opening ceremony of twelfth annual meeting of China association for science and technology. Methods Apply the principles of HACCP to carry out hazard analy- sis on the whole course of lunch making, ascertain the key control point and take relative control measures. Results After the application of the HACCP system, lunch safety in the day of opening ceremony have been guar- anteed. Conclusion It is an inevitable tendency to apply the principles of HACCP and to carry out hazard analysis in sanitation supervision at significant activity.
