摘要
本试验通过应用蛋白高度测定仪和EMT-5200型蛋品测定仪比对,确认EMT-5200型蛋品测定仪测量哈氏单位的可靠性,并通过多角度测定数据比较分析,确定EMT-5200型蛋品测定仪测量哈氏单位的正确使用方法。选用当天生产的鸡蛋和放置14 d的鸡蛋为样本,检测结果显示:③利用EMT-5200型蛋品测定仪检测哈氏单位时,当蛋黄中心至浓蛋白边缘最远的一点在测量板上正向进入仪器时,测量值与直接测量蛋白高度计算哈氏单位方法的结果差异不显著(P>0.01);③使用EMT-5200检测哈氏单位的准确性和测量板进入仪器时鸡蛋浓蛋白散状角度有关;③存放时间较长的鸡蛋使用EMT-5200检测的哈氏单位准确度降低。
This study was conducted to confirm the reliability of Egg Multi Tester EMT-5200 by comparing to albumen height micrometer, and furthermore to supply a proper operational approach of EMT-5200 tester by analyzing a number of sample loading angles. Eggs producted on the day and preserved for 14 days were used as samples. The results showed that:(~)No significant differences were observed between the two approaches when egg samples vertically entered into Egg Multi Tester(P〉0.01),i.e.,when the line link the center of egg yolk to the farthest point of thick albumen was parallel to the direction of sample loading; (~)The accuracy of EMT-5200 had close relationship with the directions of thick albumen;(~)The Egg Multi Tester had poor accuracy when measuring the long-time preserved eggs compared to fresh eggs.
