摘要
将黑玉米汁酶解 ,与奶粉和苹果汁一并进行乳酸菌发酵 ,经冷藏制成黑玉米冷冻活菌酸奶。对黑玉米果奶的配方、工艺流程及主要的操作技术要点进行了研究 。
The method of making a new kind of yoghurt was reported by mixing fermented black corn, milk powder and apple juice and then letting the mixture go through refrigeration.The prescription, processes and main operation sequence were experimentally studied.Some problems and counter measures were also discussed.
