鱼类腐败是个极其复杂的过程,而微生物活动是引起水产品腐败变质的主要原因。文章概述了鱼类腐败过程和腐败菌、鱼类特定腐败菌以及腐败菌腐败能力定性和定量研究情况,为研发鲜鱼冷却链物流技术,提高鱼产品质量提供基础资料。
Fish spoilage is a very complicated process. Microbial activity is the main reason for the spoilage of aquatic product. This article provides an overview of the process of fish spoilage and special spoilage organisms, specific spoilage organisms of fish and qualitative and quantitative analysis of their spoilage ability, in order to provide initial value for the development of cooling chain logistics technology and improving the quality of fish products.
