摘要
食品添加剂是为改善食品品质和色、香、味以及为防腐和加工工艺而加入食品中的化学合成或者天然物质。为了解当代大学生对食品添加剂的认知情况,从知、信、行3个方面采用网络发布调查问卷的形式对大学生进行了调研。调查结果显示,从整体看,大学生对食品添加剂安全事件的关注度、对食品添加剂的了解程度都较高。
Food additives are the chemical synthesis of natural substance added to food for improving food quality and color, smell and taste, and for the preservation of processing. In order to understand the contemporary of college students' awareness of food additives, we investigated college students from three aspects, namely, knowledge, attitude and practice, in the form of aques- tionnaire on web. The survey results show that the students have high level of attention on the safety of food additives, events and understanding of food additives.
