摘要
本文介绍了一种新的液氮喷雾式食品流态化速冻装置 ,实验证明该装置在食品的冻结速度、冻结质量等方面都有所提高。
A new type of LN 2-spraying fluidized freezing system is introduced in this paper. The experimental results show that the freezing rate and the quality of food are both improved.
