摘要
不同蛋白浓度条件下制备玉米醇溶蛋白膜,在不同环境温度下储藏24 d,以蛋白膜的抗拉强度和断裂延伸率为指标,研究储藏过程中蛋白膜机械性能的变化.结果表明:随着储藏时间的延长,玉米醇溶蛋白膜的抗拉强度先增加后减小,断裂延伸率先降低后上升.抗拉强度和断裂延伸率均在储藏6 d或12 d后达到最值,且不同蛋白质浓度的膜取得的最值差异较大.储藏温度较高时,蛋白膜的抗拉强度和断裂延伸率分别呈增大和减小的趋势.不同蛋白浓度的蛋白膜稳定性也不相同,综合考虑,成膜溶液中蛋白质浓度10%的蛋白膜稳定性较好.
The zein films prepared from film-forming solution with different protein concentrations were stored at different ambient temperatures for 24 days,and the changes on tensile strength(TS) and elongation at break(EB)of the zein films were researched. The results showed that the TS of the zein films increased firstly and then decreased,and the EB decreased firstly and then increased as the storage time prolonged. Both the TS and the EB reached a maximum or minimum value after storage for 6 or 12 days,respectively; and the films prepared from film-forming solutions with different protein concentrations had a large difference in the maximum or minimum value. The TS and the EB were respectively in an increasing and an decreasing trend at a high storage temperature. The zein films prepared from the film-forming solutions with different protein concentrations were different in stability. Considering comprehensively,the zein film prepared from a film-forming solution containing 10% protein had better stability.
