摘要 介绍了检测食用油品质的几种方法,并进行了评述。近年来,食品安全问题备受关注,掺假食用油和地沟油重返餐桌的问题被不断曝光,引发了人们对食用油质量安全的担忧。目前,传统食用油质量的检测方法均存在着一定缺陷,并给不法分子带来可乘之机,而现代的一些仪器分析方法尚不成熟。近年来利用食用油中脂肪酸和的DNA分析油脂是否掺假的方法值得人们深入研究,为开发出更加合理的食用油测定方法提供了思路。 A review was given for the detecting methods about the quality of edible oil. In recent years, the phenomenon of edible oil adulteration and trench oil return to the table despite repeated prohibitions caused great concern about the safety of the edible oil. At present, some defects exist in traditional detecting methods for edible oil, which afford chance for criminal. Nevertheless, advance instrumental analytical methods are immature. In recent years, the using of fatty acid and DNA analysis of the oil whether adulteration methods are worth further study. Therefore, to investigate a reasonable analysis method for detecting the quality of edible oil became a focused research subject.
