摘要 菊粉酶是一种能水解菊粉中β-2,1-D果聚糖果糖苷键的一类水解酶,在许多微生物如真菌、酵母和细菌中存在。菊粉酶可用于生产高果糖浆、低聚果糖和酒精,在药学和食品工业中具有重要的应用价值和良好的应用前景。本文介绍了菊粉酶的分类、性质、产酶微生物、条件优化、分离纯化及应用进展。 ABSTRAGT:Inulinases is classified among the hydrolases and targets on the β-(2-.1 )-linkage of inulin and hydrolyzes it into fructose and glucose. Inulinase have been isolated from many microorganisms including fungi, yeast and bacteria. Inulinase can be used in producing high fructose corn syrup,fructo-oligosaccharides and alcohol, and it has significant potential for the application in food industry. The existence of inulinase and its classification, properties, enzyme-producing strains, fermentation conditions, extraction ,purification and application were presented.
