摘要 简述功能性红曲米固态发酵工艺及其特点;介绍工厂生产中一些关键点的控制及对整个发酵过程的影响。 This article introduces the technology and feature of solid-state fermentation process of functional red yeast; The control on the key points in the workshop production process and effect on fermentation are reviewed in this paper.
