摘要
壳寡糖作为壳聚糖的降解产物,以其独特的功能性质,近年来受到人们越来越多的关注。壳寡糖具有改善肠道菌群、调节植物生长、抑制肿瘤等作用,在食品、农业和医药等领域都有广阔的应用前景,而壳聚糖酶是酶法制备壳寡糖的专一性酶,国内外对于壳聚糖酶的研究从未间断过。本文对壳聚糖酶进行了简介,并综述了壳聚糖酶的获取、分离纯化、固定化以及应用等研究概况。
In recent years, chitooligosaccharides, degradation product of chitosan, have got much more attention from people because of its special functional properties. Chitooligosaccharides shows extensive potential application prospect in food, agriculture and medical field due to its effect of improving the intestinal flora, regulating plant growth and tumor inhibition, et al. Chitosanases are specific enzyme for hydrolyzing chitosan into chitooligosaccharides. In this paper, chitosanases is specifically introduced, and its acquisition, purification, immobilization and applications are reviewed.
