摘要 本研究用超临界CO2萃取法萃取玉米黄粉,将玉米黄粉中的色素脱除,然后以脱色后的玉米黄粉为原料,利用醇溶蛋白溶于60%~95%乙醇及强碱的特性,用醇-碱法提取醇溶蛋白。研究固液比、醇碱比、pH值及提取时间4种因素对醇溶蛋白提取量的影响,进行单因素实验。利用响应面法进行条件优化,确定最佳提取工艺参数,即固液比1:36,醇碱比1:4,pH值为4.57,提取时间为180min,最终的醇溶蛋白提取率为27.9%,颜色淡黄。 This study first with supercritical CO2 extraction extraction maize yellow powder, the maize yellow powder of pigment removal, then after decolorizing of maize yellow powder as raw material, use alcohol soluble protein soluble in 60%-95% ethanol and the characteristics of strong base, use pure-alkali distillation gliadin. The solid-liquid ratio, alcohol alkali ratio, pH value and extraction time four factors on the influence of the alcohol soluble protein extraction, single factor test.By the response surface method for optimization of conditions, the optimum extraction technology parameters, namely solid-liquid ratio rising 1:36, alcohol base than 1:4, pH value is 4.57, extracting time for 180 min, the alcohol soluble protein extraction efficiency for 27.9%, the color yellow.
