摘要
芥菜籽含有丰富的营养物质，特别是具有异硫氰酸酯、多糖、芥子碱等功能性物质。本文重点综述了芥菜籽的功能成分及药理作用，并对芥菜籽在食品工业发展前景进行了展望。
Mustard seed is rich in nutrients. Particularly, it contains isothiocyanates, polysaccharides, sinapine and other functional materials. Based on previous studies, this paper states the functional factors and pharmacological actions of the mustard seed. It also discusses the development and utilization of the mustard seed as health food.
