纤维素酶提取黑木耳残渣中膳食纤维的条件优化 被引量:13

The Optimal Conditions for Extraction of Dietary Fibre from Auricularia auricula Residues with Cellulase

摘要 研究对黑木耳多糖提取后的残渣进行再利用,采用纤维素酶法分别提取残渣中的可溶性膳食纤维及不溶性膳食纤维,并探讨酶底比、料液比、提取温度、提取时间及pH对膳食纤维得率的影响。通过试验确定从黑木耳残渣中提取膳食纤维的最优条件为:酶底比100 U/g,料液比1∶30(g/mL),提取温度55℃,提取时间90 min,酶解pH5。此条件下可溶性膳食纤维提取率为9.28%,不溶性膳食纤维提取率为40.32%,IF/SF比值为4.34。试验为后期2种膳食纤维的应用提供技术支撑。 Soluble dietary fiber and insoluble dietary fiber were extracted from Auricularia auricula polysaccharide extraction residues with cellulase. Cellulase dosage, material-fiquid ratio, extraction temperature, extraction time and pH have been discussing on influence of the yield of dietary fiber. The optimal condition for extracting dietary fiber was obtained, that was cellulase dosage 100 U/g, material-liquid ratio 1: 30 (g/mL), extraction temperature 55℃, extraction time 90 min, pH 5. Under the optimum extraction conditions, the ratio of soluble dietary fiber was 9.28%, the ratio of insoluble dietary fiber was 40.32%, and IF/SF ratio of 4.34. The results offered a technical support for the utilization of two kinds of dietary fiber.
