Present Status and Progress of Evaluation on Nutritional Composition of Coilia ectenes

摘要 对常用的营养评价方法以及刀鲚的资源现状和营养研究现状进行了综述。从生物学评价以及非生物学评价方法2个角度对各类营养素的评价方法的归纳,重点介绍了几种非生物学方法对鱼类中重要的营养素,蛋白质的评价方法;并对已报道的刀鲚肌肉和卵巢的营养成分研究进行了归纳,从营养成分的角度分析了长江刀鲚比其他种群肉质鲜美的原因。 Several nutritional evaluation methods and the resource status and nutritional research of Coilia ectenes were reviewed. The evaluation methods of the various nutrients, mainly divided into biological evaluation methods as well as non-biological methods, were inducted. Evaluation methods of protein and the important nutrient in fish were introduced from the point of non-biological methods. Research on nutrients from muscle and ovarian of Coilia ectenes were summarized. The influence on the taste of Coilia ectenes in the Yangtze River was analyzed in the terms of nutrients composition.
