摘要
为加强对高校食品实验室安全管理,对HACCP系统在食品实验室中的应用进行研究和探讨。通过对食品实验室特点的分析,把HACCP体系引入到食品实验室安全的日常监管中来。通过危害分析,确定关键控制点,提出相应的控制措施。通过对食品实验室实施HACCP计划,显著提高了实验室的安全,为HACCP体系在高校实验室安全管理提供了可行的实践依据。
In order to strengthen safety management of university food laboratory, the application of HACCP in food lab was discussed. The HACCP system was introduced into the day-to-day supervision of food lab, based on the analysis of the characteristics of food laboratory. Hazard analysis, and determine critical control points, and then put forward the corresponding control measures. Through the implementation of HACCP in food laboratory, laboratory safety was improved significantly, and practical basis was provided for the application of HACCP system in college laboratory safety management.
