免疫比浊法定量测定制糖过程中的葡聚糖 被引量:6

摘要 本文用最近研制成功的单克隆抗体试剂盒定量检测甘蔗制糖过程中的葡聚糖,对广东、广西、云南多间糖厂的甘蔗原料及生产线上的葡聚糖含量进行调查,并在制糖工艺中进行添加葡聚糖酶的试验。结果表明:机收甘蔗在收获后32h葡聚糖含量远高于人工收获甘蔗;添加葡聚糖酶可有效分解炼糖各环节的葡聚糖,从而降低白砂糖中的葡聚糖含量,提高产品品质。
